Disclaimer! This recipe does contain alcohol, however you can totally make it alcohol free by subbing with coconut water!
So I made this one evening after cooking up a really yummy Mexican dish for dinner. I was craving something kind of tropical and I wanted to see if I could make something healthier than those frozen pre-made margarita drinks you can get at supermarkets. I hit the nail right on the head with this one (not to toot my own horn or anything!) and I am seriously loving this drink. It’s perfect for summer as it’s very refreshing and frothy. I decided to add some alcohol because that’s the mood I was in.
I don’t usually talk about or promote alcohol on here or on my social media accounts, I think it’s a touchy subject for some and on the healing side of things it may be seen as a questionable choice. I know I am on a healing journey, but I don’t want to restrict myself to the extreme where it ends up making me unhappy with my choices. I want to have the freedom to choose and not feel guilty. So I enjoy an occasional bevvy now and again. I won’t be posting too many of these, as my goal is really to promote healing foods and meals, but if you’re going to consume alcohol, you should at least make it a healthy version! So, here ya go, a good, fun, summer-time bevvy to enjoy!
Ingredients:
1 Cup Frozen Pineapple
1/4 Cup Water
1/2 Lime
1 oz Coconut Vodka
Method:
Juice a lime into your blender, add all other ingredients and blend until nice and smooth. Pour into a cup and enjoy!
